This is a follow up Reinspection to verify corrective actions for routine inspection conducted on 3/19/24 All pitted cutting boards were replaced. The high temperature glassware washer in bar area is out of service. Waiting on a part sign placed on machine “out of service “ Note FSE is using individual wrapped wooden stirrers sticks for beverages. In use utensils are no longer stored in stagnant water. Note: Foodworker was ordered to discard carrots with white mold in walk in cooler. PIC acknowledged the new foodworker was properly trained by the front of the house about proper sinks to use for handwashing. Date marking was observed on all TCS foods held in WIC for 24 hours or more. NOTE: all items not corrected during this reinspection remain outstanding. 4/16/24 4:00 pm responded to complaint about possible plumbing leak and unsanitary conditions. Source was from an apartment while work was being conducted water leaked from 2 floor to the kitchen ware-washing area, salad prepped area was impacted they moved everything all areas cleaned and sanitized by staff, Inspection of small dishwasher behind bar had out of order sign posted, the temperature was warm inside a possible indication the machine may have been recently used , management was ordered to unplugged the machine and possibly put tape around the machine to prevent anyone from using. Per Dir. of Health ordered constant facility visit to verify compliance with orders of non-functioning High Temp dishwasher behind bar. On 4/22/24 at 9:06 am I observed small pieces of green tape around the door of the machine that were broken. No manager or PIC was present at the time of my visit, a call was placed to Petula Restaurant Manager who stated she had to break the tape to place a new rack inside the unit. observation of the strainer/tray in the bottom of the unit that catches small food particles is that there are additional food particles in the strainer from my last visit. The Restaurant manager stated that a call was place to EcoLab and they are waiting on a response. She will ask maintenance to remove the unit in the interim.
