Cooked corn in the cob should be cooked on the walk-in (not counter)… roasted sliced green peppers must be cold held on the line, bean cooling in walk-in 6 hour of cooking at 58-69 degrees. Cold holding ok. Called for a service on the bar dish machine during inspection. Score: 90 B |
