SCORE: 95, A. Solid inspection. Lengthy conversation about chicken prep and hand washing. Gloves worn, hand washing observed. There is no prepping of chicken downstairs. Never was. Chicken prepped on existing prep table in kitchen. Cut and pounded then breaded. Stored on single sheet pans and stored in designated freezer downstairs. After freezing, chicken is separated into ziplock bags (12 pieces per bag) and kept frozen in same cooler. Prep area upstairs was then completely broken down and sanitized. Items able to go through dish machine are sent through and walls and table with slicer sanitized. This was observed and this practice happens once per week with exceptions. |
