SCORE: 92, A. Clean and organized. Gloves worn. Discussion with chef about other ways to eliminate bare hand contact with wait staff and bread going out for consumption. Currently using gloves but during busier times this step may be skipped. Allowing use of a dinner napkin and tongs in handling bread. All temps good. Proper reheating of soup observed. Good labeling practices. |
