Caesar is made in Stamford with pasteurized eggs, new products offered in cryovac bags.......pizza & quesadillas, cooked chicken and cooked chili are also in bags coming from Stamford kitchen. BTU onsite checking all refrigeration, routine service. All units cold holding and soup & empanadas hot holding. Time holding logs are being maintained for breakfast items held out of temperature. Milk at the coffee station should be held at or under 41 degrees. Doing a good job of date marking product. Upright freezer will some ice forming on back wall, BTU advise to remove a barrier and allow for air movement. New hot water dishmachine installed. Very good inspection! Score: 98 A |
