Large Sysco delivery in back........staff working to put in all away, do not overstock upright fridge, must allow for air movement, keep rolling cart from line hand sink (large delivery) so things were shifted around per Chef. Hot holding and cooking temps ok, hand washing and gloves use observed by kitchen staff. Recently had employee food safety training. New dish machine in use. Score: 93 A |
