SCORE: 98, A. Excellent excellent excellent inspection. Hot: rice 152, pulled pork 185, chili 170. Cold: cheese 34, burgers 39, chicken 39 going on grill (206 coming off grill), cut tomatoes 41. Cooked friable onions on cook line uncovered. Manager explains that if covered when warm they get soggy. When cooled they cover with another hotel pan which is their normal practice. |
